J&rsquo;\u00e9tais tout content, je dois dire.<\/p>\n\n\n\n<p>MAIS alert\u00e9 par une amie cuisini\u00e8re \u00e9m\u00e9rite et qui plus est sp\u00e9cialiste de la conservation sous toutes ses formes, alors que je faisais mon malin avec mon joli pot, j&rsquo;ai appris que <a href=\"https:\/\/www.ricardocuisine.com\/chroniques\/chimie-alimentaire\/393-les-huiles-aromatisees-dangers-et-precautions\" data-type=\"link\" data-id=\"https:\/\/www.ricardocuisine.com\/chroniques\/chimie-alimentaire\/393-les-huiles-aromatisees-dangers-et-precautions\">l&rsquo;huile aromatis\u00e9e est potentiellement un r\u00e9servoir \u00e0 toxine botulique<\/a>, qui est quand m\u00eame potentiellement mortelle (et d&rsquo;autant plus dangereuse qu&rsquo;elle est tr\u00e8s peu d\u00e9tectable car elle ne g\u00e9n\u00e8re pas d&rsquo;odeur particuli\u00e8re). Les conditions favorables au d\u00e9veloppement des spores de Clostridium botulinum sont 1) l&rsquo;absence d&rsquo;oxyg\u00e8ne, 2) la temp\u00e9rature ambiante (entre 18 et 40 \u00b0C), et l\u2019activit\u00e9 des spores et des bact\u00e9ries est fortement ralentie par la r\u00e9frig\u00e9ration), 3) l&rsquo;humidit\u00e9, et 4) le faible taux d&rsquo;acidit\u00e9.<\/p>\n\n\n\n<p>&gt;&gt; Par prudence, une huile aromatis\u00e9e doit absolument \u00eatre conserv\u00e9e au frigo, pendant une semaine et pas beaucoup plus. Je l&rsquo;ai d\u00e9j\u00e0 conserv\u00e9 plusieurs mois, je ne suis pas mort, mais maintenant que je suis au courant, je n&rsquo;ai pas envie de tenter le diable.<\/p>\n\n\n\n<p>Alors apr\u00e8s cette alerte, j&rsquo;ai choisi de transf\u00e9rer le contenu du joli bocal de l&rsquo;image mise en avant dans de petits pots en verre, que je vais mettre au cong\u00e9lateur et que j&rsquo;ouvrirai au fur et \u00e0 mesure de mes besoins. \u00c7a m&rsquo;apprendra: l&rsquo;ann\u00e9e prochaine, je veillerai \u00e0 consommer le basilic petit \u00e0 petit, c&rsquo;est quand m\u00eame plus simple
